VitaFiber Chcolotae Beet Cake

Chocolate Icing

Ingredients

  • 2 3/4 cups (300 g) VitaFiber® IMO powder
  • 6 tablespoons (90 ml) unsweetened cocoa powder
  • 6 tablespoons (90 g) butter
  • 5 tablespoons (75 ml) evaporated milk or cream
  • 1 teaspoon (5 ml) vanilla extract

Method

  • In a medium bowl, sift together the Vitafiber and cocoa, and set aside.
  • In a large bowl, cream butter until smooth, then gradually beat in Vitafiber mixture alternately with evaporated milk.
  • Blend in vanilla and beat until light and fluffy.
  • If necessary, adjust consistency with more milk.
