Vegan Matcha Cookies

Ingredients

2 Tbsp VitaClassic Syrup

1 Flax Egg ( 1 Tbsp Flax + 2 Tbsp Water)

1 1/4 cup All Purpose Flour

1/2 cup Erythritol-Stevia Blend

2 tsp Matcha Powder

1/2 tsp Baking Powder

1/2 tsp Baking Soda

1/4 tsp Salt
-
1/4 cup Plant-Based milk
-
1 tsp Lemon Juice

1 tsp Vanilla Extract

2 Tbsp Mini Chocolate Chips
Directions
- Prepare the Flax Egg and set it aside.
- Whisk together the All Purpose Flour, Erythritol-Stevia Blend, Matcha Powder, Baking Powder, Baking Soda, and Salt.
- In a separate bowl, whisk together the Flax Egg, Plant-Based milk, VitaClassic Syrup, Lemon Juice, and Vanilla Extract.
- Slowly add the liquid ingredients to the dry ingredients and mix until just incorporated. Add the Mini Chocolate Chips.
- Roll into 12 balls and flatten gently.
- Bake for 8-11 minutes.
