Vegan Matcha Cookies

High in fiber and antioxidants, these cookies are deliciously vegan!

    Ingredients

    • 2 Tbsp VitaClassic Syrup

    • 1 Flax Egg ( 1 Tbsp Flax + 2 Tbsp Water)

    • 1 1/4 cup All Purpose Flour

    • 1/2 cup Erythritol-Stevia Blend

    • 2 tsp Matcha Powder

    • 1/2 tsp Baking Powder

    • 1/2 tsp Baking Soda

    • 1/4 tsp Salt

    • 1/4 cup Plant-Based milk

    • 1 tsp Lemon Juice

    • 1 tsp Vanilla Extract

    • 2 Tbsp Mini Chocolate Chips


    Directions

    1. Prepare the Flax Egg and set it aside.
    2. Whisk together the All Purpose Flour, Erythritol-Stevia Blend, Matcha Powder, Baking Powder, Baking Soda, and Salt.
    3. In a separate bowl, whisk together the Flax Egg, Plant-Based milk, VitaClassic Syrup, Lemon Juice, and Vanilla Extract.
    4. Slowly add the liquid ingredients to the dry ingredients and mix until just incorporated. Add the Mini Chocolate Chips.
    5. Roll into 12 balls and flatten gently.
    6. Bake for 8-11 minutes.
