Ube (Purple Sweet Potato) Spread

Tip: Add room temperature Coconut Oil for more creaminess! Serve it with toast, pancakes, or waffles, or sandwich it between two cookies!

2 Tbsp VitaClassic Syrup
200g Ube (Purple Sweet Potato)
1/4 cup Coconut Milk
- Peel the ube, dice into small cubes, and steam it on high until soft (about 15 min).
- Allow the cooked ube to cool down.
- In a food processor; add the ube, coconut milk, and VitaClassic Syrup. Blend until it is creamy and smooth; add more coconut milk by the teaspoon if it is too thick.
- Transfer the ube spread into a jar and allow it to harden in the fridge before serving.
