Golden Mylk Oatmeal Cookies

If you're a big fan of oats then this recipe is for you!  It's vegan, gluten-free and the texture is chef's kiss.

    Ingredients

    • 1 Flax egg
    • 100g GF quick oats
    • 90g GF flour blend
    • 1 1/2 Tsp Turmeric Golden Mylk mix
    • 1 Tsp Baking powder
    • 1/4 Tsp Salt
    • 28g Coconut oil, melted
    • 1 Tsp Vanilla extract
    • 60mL VitaFiber Syrup
    • 90ml Oat mylk
    • 2 Tbsp Dark chocolate chips

    Directions

    1. In a mixing bowl, prepare your flax egg (1 Tbsp ground flax + 3 Tbsp water) and allow it to sit for 5 min or until it gels up
    2. In a separate mixing bowl, whisk together the GF oats, GF flour, Turmeric Golden Mylk, baking powder, and salt
    3. Add VitaFiber Syrup, oat mylk, and vanilla extract to your flax egg mixture and whisk until combined
    4. Add your liquid mixture to your dry mixture
    5. Fold in your chocolate chips and mix until well incorporated
    6. Cover your dough and allow it to chill in the fridge for 30 minutes
    7. Preheat your oven to 325F and line a baking sheet with parchment paper
    8. Use an ice cream scoop to create your cookie balls
    9. These cookies won’t spread so gently flatten them to your desired thickness
    10. Bake for 9 min
