Blueberry Protein Pancakes
Delicious classic pancakes that are packed full of protein!

Serving size: 24 4 inch pancakes
- 2 oz VitaClassic Syrup
- 1 1/4 cup protein powder
- 2 1/4 cup flour
- 1 1/2 tsp salt
- 2 tsp baking powder
- 4 eggs
- 1 lemon- juiced
- 1 cup water
- 1/2 stick butter
- 2 tsp vanilla
- 1 cup Greek yogurt
- Separate egg whites and yolks.
- Melt butter in microwave, approximately 20 seconds.
- Combine butter, water, yogurt, lemon juice, vanilla, and egg yolks. Mix well.
In separate bowl, combine dry ingredients: protein powder, flour, salt, and baking powder. Stir.
In separate bowl, whip egg whites with a whisk to soft peaks. Add VitaClassic syrup to egg whites. Continue to whisk until stiff peaks.
Combine all liquid and dry ingredients except egg whites/VitaClassic syrup. Try not to over mix. Lumpy is okay!
Fold in egg whites/VitaClassic syrup.
Add blueberries, and griddle pancakes. Add Keto friendly syrup as desired.
