Keto Banana Muffins with VitaFiber™

These Keto banana muffins are great for anyone on a Keto or low carb diet.  They make a great breakfast, snack or treat! Using VitaFiber in my recipes is a great way to sneak in extra fiber. I can feed these to my family knowing they are a smart choice. You can top these with whatever you want. I picked You Fresh Naturals Caramel frosting.

This recipe is simple & easy to whip up.  With just a few ingredients, like bananas, coconut flour, VitaFiber & few other things, you will have delicious muffins in no time. Baking with Coconut flour provides so many added benefits, such as: low carbs, extra protein, gluten free, healthy fat, contains lauric acid, safe for diabetics, high fiber, and is deliciously dense.  I love using this flour as much as I can.

Here is the recipe below, hope you like it:


  • ½ cup bananas
  • 5 eggs
  • 1 tsp vanilla
  • 8TB melted butter
  • ½ tsp pink himalayan salt
  • ½ cup coconut flour
  • ½ cup VitaFiber Powder
  • ½ tsp baking powder
  • ½ tsp baking soda


  1. Preheat oven to 350. Mix together the dry ingredients.
  2. Mash the bananas. Mix together the wet, and combine both the dry wet together.
  3. Scoop in muffin pan. Bake for 20-25 minutes.
  4. Let cool and go ahead and top with a topping of your choice!
